Grilled PB, Banana and Honey Sandwiches

This recipe was kind of an end of the unit “freebie” recipe because I gave them a pop quiz but I also wanted to teach a few important lessons.
1. This was Elvis’s favorite sandwich.
2. Peanuts are legumes and when legumes and whole wheat are eaten together they form a complete protein. So you eat a pb and jelly sandwich on whole wheat bread and your body says, “thanks for the chicken!”.
3. The big food trend now is “use the best quality ingredients and let them speak for themselves”. That is what we did here! 5 ingredients… peanut butter, honey, bananas, whole wheat bread, and butter. The flavors complement each other in a way that even I didn’t expect when I threw the recipe together. Sometimes, simple is way better!
Grilled PB, Banana, and Honey Sandwiches
Makes four grilled sandwiches

8 slices whole wheat bread
1/3 c. creamy peanut butter
1 large banana, sliced thinly
2 tbsp. honey
2 tbsp. salted butter, softened

Assembly line! Line up all eight slices of bread and spread peanut butter evenly on each slice.


Divide banana slices evenly among 4 of the bread pieces.

Microwave honey in small glass bowl for 10 seconds. Drizzle honey on top of bananas.


Top with four remaining peanut butter slices.

Butter outsides of each sandwich.

Heat griddle (or grill pan or panini machine) to medium high heat.
Arrange sandwiches on griddle.
Flip when golden brown.

Finish cooking and plate. Cut diagonally. Serve!


Another option: Nutella! I had a peanut allergy kid who looked SO sad that he couldn’t make a sandwich. I gave him my own personal jar of Nutella to use but we had to keep it on the D.L.. otherwise everyone would have gotten jealous!

Thank the Lord one kid didn’t want his… I got to eat my own sandwich! This is me eating my sandwich back at my desk after class ended. I was really happy, and thought I’d take a picture!
Now seriously, when I put together the recipe I figured it’d be good, because really, how could this NOT taste good? But ohmygosh… I underestimated it. I felt like my insides melted a little bit when I chewed the first bite.
A GREAT breakfast, amazing snack, perfect dessert! Big fan… big… HUGE.
