More of an idea than a recipe, these eggs would make a great snack for you and your kids. They take no time to make, can be made ahead, and are pretty enough for a party appetizer.
About five years ago when I was footloose and fancy free (no husband, no baby), I was down the shore with my family and some family friends. Amy, from California, told me that her three year old son Max just LOVES an afternoon snack made from egg whites and hummus. At this point in my life, I wasn’t in the habit of making healthy mid-day snacks, so I stored this little tidbit away in my mind. Well, turns out baby girl loves hummus, so it’s a staple in my fridge even more than it used to be. When I had some very healthy friends over and we got hungry, I remembered these eggs! I had some hard cooked eggs in the fridge and basil growing in the backyard, so this snack literally came together in five minutes.
Some calorie math: an egg white has 17 calories, so half of a hard cooked egg white would have (about) 9. 1 tablespoon of hummus has about 30. Basil has no calories. SO, each little snack has only 40 calories! You can eat 5 for just 200 calories – a perfect afternoon snack. I would put out some carrots as well, as you can use the egg as a dip container before chomping in.
Lastly, a hard cooked egg lesson. Hard cooked eggs are a GREAT diet food to have around. At 70 calories and 6 grams of protein per egg, you have nature’s perfect “to-go”, fully wrapped, healthy snack. Just keep them chilled! The way to make perfect eggs (easy to peel, no green ring around the yolk, and a tender white) is to put your eggs in the bottom of a saucepan or pot. Fill just to cover with cold water. Place lid on the pot and place over high heat. When the water boils, turn the heat off (but leave the lid on) and set your timer for 10 minutes. After ten minutes, drain the hot water from the pan and run ice cold water over eggs until the water in the pot stays cold, then add ice to chill completely. Drain and place in a sealed container in the fridge – will last for up to 1 week.
Angel Eggs – downright “holy” when compared to the deviled egg which clocks in at over 70 calories per serving and over 7 grams of saturated fat.
6 hard cooked eggs, chilled, halved
1 small container of hummus (any flavor you like)
2-3 tbsp. chopped fresh basil (or parsley)
Freshly ground black pepper
1. Carefully slice each egg in half, vertically (long-ways). Discard yolks or feed them to your dog.
2. Spoon about a tbsp. of hummus into each cavity. Chill, covered with plastic wrap. If serving immediately, no need to chill!
3. Sprinkle with basil/parsley and black pepper.
4. Serve with carrots.
